Valentine’s recipe makeover: Rose mini-Cupcakes

Hey everyone 🙂

I mentioned earlier that I was gonna enjoy my pretty cupcake on my Valentine’s night.

And so..this is what I meant. So pretty and delicate. Smells like rose ❤

These pretty cupcakes are just perfect 🙂

Any plus point? yes! It’s been made-over. It’s low in saturated fat and cholesterol. It also comes in perfect portion size. Nothing less or more than you need. 🙂

Rose mini-Cupcakes

makes 48 mini cupcakes

1/2 cup sunflower spread, at room temperature
1 cup raw sugar 
2 eggs
1 teaspoon rose essence
1/2tbsp baking powder
1 1/2 cups flour
1 cup light (soy)milk- you can always use low fat cow’s milk

For icing:

1/2cup sunflower spread, 1 cup icing sugar, 1tsp rose essence

Optional- pink food colouring, heart-shaped chocolate cake decoration (I got them from the supermarket)

How?

Preheat the oven at 175C. Beat the spread with a mixer or handheld stick mixer (or even manually 🙂 extra exercise for your arm ;P) until soft and creamy. Gradually add the sugar, and beat until white and fluffy! It took me about 2-3mins. Then, beat in the eggs.

Add the rose essence and milk, stir it with a wooden spoon or spatula. Carefully, sift the flour and baking powder in. Mix them well. Lastly, add a drop of pink food colouring (if you wish).

Pour the batter into mini cupcake-paper lined tins, about 3/4 full.

Bake for 18-20mins until the cupcakes are baked through — a toothpick inserted into the center should come out dry.

Once the cupcakes are cool enough to touch, remove them from the tins onto a cooling rack. While you are waiting for the cupcakes to cool down, you can start making the icing! *Exciting part!*

Basically, beat the sunflower spread (at room temperature) until soft and creamy (it took me about 2mins because it’s not much). Slowly add in the icing sugar and continue beating until light and fluffy. Lastly, add the rose essence and a drop of pink food colouring! If you feel like it’s too much of rose, you can always opt for vanilla essence instead. But I thought it was just perfect because the rose essence only gives a very subtle flavour and aroma 🙂 Then, put the batter into a piping bag and choose the nozzle you’d like 🙂

Remember to wait until the cupcakes are completely cool. Otherwise your icing will melt instantly! (happened to me once!)

You don’t have to put icing on top of the cupcakes if you prefer not to~
